
For Jim’s Birthday Tuesday Gift, I baked him homemade Vegetarian Pot Pies. I had remembered the basics of a recipe I had seen in Real Simple and figured I could just wing it. Surprisingly, they turned out just fine. Basically, all you have to do it buy a bag of frozen veggies (I liked the Fiesta Mix since it also had some yummy beans in it), Cream of Potato Soup and some pre-made Pastry Shells. Mix the thawed out veggies with the soup and then scoop mixture into small pie plates (you could also buy the disposable ones). Roll out the pre-made pie shells until they are large enough to fit around your pie plate, affix edges, cut holes and then cook for approx. 30 mins. So easy, huh? And perfect for the first day of Autumn!
